A GUI client like https://flathub.org/apps/dev.deedles.Trayscale

I'm thinking of using this for LAN games. (Was using hamachi and then found out about tailscale then found out about headscale which seems to not have a GUI as of right not unlike tailscale)

Headscale does not have a UI, and we do not really plan to, there are a bunch of community Web UIs that can be used:
https://github.com/juanfont/headscale/issues/234.

In addition, since you use the official client, the Tailscale part does have a UI.
