That ffmpeg command is odd because it lists the m4b file twice. The second m4b should be an image file, are you sure you didn't copy that over wrong?

I see what the issue is. I replaced the paths with what they are supposed to be wrapped in < >
The <IMAGE_FILE_PATH> in your case is a .m4b file not an image file. This may be a bug.

ffmpeg -f mp4 -i <AUDIOBOOK_FILE_PATH> -i <METADATA_FLIE_PATH> -f image2pipe -i <IMAGE_FILE_PATH> -y -loglevel error -max_muxing_queue_size 1000 -c:a copy -map_metadata 1 -vf [2:v]crop=trunc(iw/2)*2:trunc(ih/2)*2 -map 2:v -f mp4 <OUTPUT_FILE_PATH>

In this example I'm concat multiple files but you can still see the image2pipe input a .jpg.

ffmpeg -safe 0 -f concat -i /metadata/downloads/dl_yosnvn1p8wnrc3sl5b/files.txt -i /metadata/downloads/dl_yosnvn1p8wnrc3sl5b/metadata.txt -f image2pipe -i /audiobooks/Scott Horton/Fool's Errand/cover.jpg -y -loglevel error -map 0:a -acodec aac -ac 2 -b:a 64k -id3v2_version 3 -map_metadata 1 -vf [2:v]crop=trunc(iw/2)*2:trunc(ih/2)*2 -map 2:v -f mp4 /metadata/downloads/dl_yosnvn1p8wnrc3sl5b/Fool's Errand.m4b

Solution 01: Find matching metadata from online and complete metadata. Then try again
