refactor: rename Kopaya to Eryx
Rename the product, runtime surfaces, sidecar projects, docs, tests, and packaging outputs from Kopaya to Eryx across the repository. Co-authored-by: Copilot <223556219+Copilot@users.noreply.github.com>
